Christmas Cookie Recipe Party

Good Morning!

I am so glad that you came to my Christmas Cookie Recipe Party!!







I attended the Culinary & Craft School last weekend in Branson, Mo and we made these Apricot Nuggets. They were so easy and so yummy that I just had to share. Not a cookie, but I didn't think you would mind.



Apricot Nuggets

1 box (1 lb) powdered sugar
4 tablespoons melted butter
2 tablespoons orange juice or Grand Marnier
1/2 teaspoon vanilla extract
11 ounces dried apricots
1 cup pecans, fine chopped
Run apricots through food processor.
Mix sugar, butter, orange juice and vanilla extract. Put sugar mixture and ground apricots in a large bowl and knead until well blended. Form into 1-inch balls. Roll in chopped pecans.
**You can also dip these in melted chocolate to make them into truffles. I did that and it was heavenly! I used the candy coating called Almond Bark.

I'll have to think about adding a recipe Darlene but I must admit I'm reakky not baking this year due to my diet. I can drool over all of these though.
