Pumpkin Desserts

In keeping with my Pumpkin Recipe Theme that I started last friday with the Soft Pumpkin Cookies...I thought I would post a new & an old pumpkin recipe. Pumpkin is so perfect for this time of year & oh so good for you!!



This is the new recipe that I'm going to make for Thanksgiving. Looks so pretty & I hear it's DELISH!

Pumpkin Gingerbread Trifle

Serves: 20 servings

Ingredients
2 (14-ounce) packages gingerbread mix
1 (5.1-ounce) box cook-and-serve vanilla pudding mix
1 (30-ounce) can pumpkin pie filling
1/2 cup packed brown sugar
1/3 teaspoon ground cardamom or cinnamon
1 (12-ounce) container frozen whipped topping
1/2 cup gingersnaps, optional
Directions
Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl.


I have had alot of requests for the Pumpkin Dump Cake that I made last year for Thanksgiving, so here it is. It's super EASY & super YUMMY!!

PUMPKIN DUMP CAKE
1 (15 ounce) can pumpkin (I accidently used pumpkin pie filling, it still worked, but was was extra sweet)
1 (12 fluid ounce) can nonfat evaporated milk
4 eggs
1 cup white sugar
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1 teaspoon ground cloves
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 (18.25 ounce) package yellow cake mix
1/2 cup butter, melted
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, whisk together the pumpkin, sugar, salt, nutmeg, ginger, cloves and cinnamon. Stir in the milk, then beat in the eggs one at a time. Pour pumpkin mixture into the prepared pan.
Sprinkle the yellow cake mix over the pumpkin mixture, then sprinkle on the pecans. Drizzle melted butter over all. Bake in the preheated oven for 55-65 minutes, or until the edges are lightly browned. Allow to cool.

I have to tell you, I made that trifle a couple years ago for our family Thanksgiving dinner. It was so huge, I had to use a punch bowl. All day long there were jokes about having a trifle of the trifle. But, it was delicious.
